Gooseberry Chutney

This delicious chutney recipe was given to me by two of my lovely customers. Their grandchildren insist that a jar of this is produced whenever they visit!

 

Ingredients:

  • 3 pounds green gooseberries
  • 1 ¾ pounds brown sugar
  • ½ pound stoned raisins
  • 1 pound onions finely sliced or ¾ pound chopped shallots
  • 2 level tablespoons salt
  • ¼ ounce mustard seeds
  • ½ teaspoon cayenne pepper
  • 1 ½ pints red wine vinegar

 

Tie the mustard seeds in a piece of muslin. 

Put all the ingredients to simmer gently for 1 ½ to 2 hours.

Stir from time to time to avoid sticking.

When you have arrived at a soft cohered consistency, spoon the chutney into sterilised warm jars. 

Cover when cool.
