This delicious chutney recipe was given to me by two of my lovely customers. Their grandchildren insist that a jar of this is produced whenever they visit!
Ingredients:
- 3 pounds green gooseberries
- 1 ¾ pounds brown sugar
- ½ pound stoned raisins
- 1 pound onions finely sliced or ¾ pound chopped shallots
- 2 level tablespoons salt
- ¼ ounce mustard seeds
- ½ teaspoon cayenne pepper
- 1 ½ pints red wine vinegar
Tie the mustard seeds in a piece of muslin.
Put all the ingredients to simmer gently for 1 ½ to 2 hours.
Stir from time to time to avoid sticking.
When you have arrived at a soft cohered consistency, spoon the chutney into sterilised warm jars.
Cover when cool.
